Protein Pancake Breakfast

Breakfast is my favourite meal of the day, mostly because it's the easiest to make. Right now, my all time favourite reason to get out of bed is to make these delishional pancakes. I first saw these on a facebook page, who copied the recipe from a youtuber. I spent fifteen minutes trying to find the original source and can't. So I'll just show you how to do 'em. 

The original recipe had two ingredients; 2 eggs and a small ripe banana.

A lot of other protein pancake recipes use egg whites for a lower calorie recipe but I just leave the yolks in for the extra nutrish. If you wanted to weigh up the benefits of egg whites versus yolks, you could read this.

Anyways, back to the pancakes.

After making this recipe a few times, I found that the two-ingredient pancakes weren't keeping me full for the time that I wanted. So I started incorporating a scoop of protein powder, which also added extra sweetness to the pancakes. You can also add a handful of rolled oats for some fibre. I even find that these extras make the end product more "pancakier".


You crack in the eggs and mash the banana into the mixture. This is the "hardest" part (which really means this recipe is super easy). I use a fork but if you had a potato masher that might work better. If the banana is very ripe it'll make things easier, but don't worry, the mixture will always be lumpy. Add in your choice of protein powder and/or oats and stir, stir, stir.


I turn my stove onto a medium heat and use a non-stick pan so I don't have to add in too much oil. The pancakes cook almost like an omelette. I mean, they're pretty hard to mess up. Cook them for about 2-3 minutes on each side, or until you're happy with their colour. The batter should make about 3 decent sized pancakes.




I serve mine with a few strawberries and wah-lah! The morning's looking better already.


I used fitness pal (Iphone App) to calculate how many calories were in this recipe, and with all its add-ons (protein powder, oats, strawberries) it's about 350 calories, give or take. The original recipe with just the eggs and banana are about 200 calories, give or take. I just find that a bigger breakfast in the morning keeps me from ferociously snacking throughout the day.
